Air Fried Zucchini Lasagna Boats

A delicious meaty filled zucchini lasagna boat will give you all the lasagna vibes with out all the added carbs.

EQUIPMENT

  • Air fryer



INGREDIENTS

  • 1 lb Italian Ground Sausage

  • 4-6 thick zucchinis

  • 4 oz mushrooms

  • 1/3 cup chopped pepperoncinis

  • 1/2 cup ricotta cheese

  • 1 cup low carb marinara sauce

  • 1/2 cup freshly shredded mozarella cheese

  • Italian Seasoning



INSTRUCTIONS

  • Slice zucchini lengthwise and hollow out the insides. Sprinle with Italian seasoning and set to the side.

  • Brown your ground Italian sausage until it's no longer pink.

  • Add in your mushrooms, pepperoncinis and the scooped out zucchini pieces

  • Once your veggies are soft add in your marinara sauce and mix until well combined.

  • Top your meat mixture into your hollowed out zucchini slices

  • Add a thin layer of ricotta cheese on top of the meat mixture

  • Sprinkle with shredded mozarella cheese

  • Place on air fryer tray and air fry at 400 degrees for 6-8 minutes or until the zucchini is soft but not mushy and the cheese is fully melted

  • Top with grated parmesan cheese and enjoy.
