Chilaquiles with homemade salsa verde made for the most perfect Valentine’s Day brunch!

The chips were made from my favorite low carb corn tortillas . I fried them first and then cooked them in the salsa verde until slightly softened. They were so flavorful and still had crunch to them! 😍





RECIPES



INGREDIENTS


  • 12oz tomatillos

  • 1 jalapeño

  • 4 garlic cloves

  • 1/2 white onion

  • Small handful of cilantro

  • 1/4 cup water

  • Salt & black pepper



INSTRUCTIONS


1. Cut the tomatillos in half and then broil for 4-5 minutes, until top begins to crisp.

2. Place all ingredients in a food processor and blend until smooth.

3. Season with salt and pepper to taste.



Eaten with leftover pulled pork, scrambled eggs, and topped with cotija, onion, cilantro, and sour cream! It was SO good!
