Italian broccoli salad 🥗

Today I was craving broccoli salad AND an Italian sub in a tub, so I thought... why not combine them?! It was delicious and you definitely need to try it! Here’s what you need ⬇️





INGREDIENTS


FOR THE SALAD:



  • 2 cups of broccoli florets

  • 8 slices of pepperoni

  • 2 mozzarella sticks

  • 1/4 cup black olives

  • 1/4 cup banana peppers or pepperoncini’s


FOR THE DRESSING:



  • 1/3 cup mayo

  • 1/2 tbs sweetner (I used Lakanto)

  • 1 tbs white vinegar

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • ½ tsp black peper

  • ½ tsp salt



INSTRUCTIONS



1. Cut up your broccoli in to desired sized florets. Cut pepperoni into small pieces and slice up mozzarella sticks into chunks.

2. Place your pepperoni pieces on a plate and microwave for 20-25 seconds to make crispy. *You can skip this part if you want, but the crispy pepperoni pieces are delicious!

3. Add broccoli, pepperoni, cheese, black olives, and peppers into a large bowl.

4. In a separate bowl, combine everything for the dressing.

5. Pour the dressing over the salad in the large bowl and mix together.

6. Enjoy!





*Note I prefer my broccoli salad dressing with more vinegar flavor than sweetness. Adjust the dressing if you want for your own tastebuds! 😋
