Keto Popcorn Chicken

Popcorn Chicken

INGREDIENTS:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces washed and dried

  • ¼ cup coconut flour

  • ¼ teaspoon salt

  • ⅛ teaspoon ground black pepper

  • 2 large egg

  • 2 cups crushed pork rinds

  • 1 teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon paprika

Dipping Sauce

INGREDIENTS:

  • ½ cup of mayo

  • ¼ cup of ketchup

  • 1 teaspoon of Worcestershire sauce

  • ½ teaspoon of black pepper

  • ½ teaspoon of garlic salt

DIRECTIONS:

  1. Prepare a cookie sheet with foil or parchment and place a wire rack on top

  2. Combine the coconut flour, salt, and pepper.

  3. Crack the egg into the second bowl and fork whisk.

  4. In the third bowl, mix together the pork rinds, garlic powder, onion powder, and paprika.

  5. Start with coconut flour and dip the chicken

  6. Then into egg

  7. Then into pork rinds

  8. Set onto rack and let it rest for 30 minutes

  9. Fry in avocado oil 2 to 3 minutes on each side or Airfry at 390-400 degrees for 10-15 min.

  10. Drain on paper towels

  11. Make dipping sauce and enjoy
