We made this easy cheese dip for super bowl and it was a HIT! If youâve never made fundido, you need this in your lifeeeee! It takes no time at all and is SO flavorful! Of course I used my favorite low carb tortillas to make chips to dip!

INGREDIENTS
5oz chorizo (I used @caciqueinc brand)
1/2 white onion, diced
3 garlic cloves, minced
1/4 cup cilantro, chopped
6oz Monterey Jack cheese
6oz mozzarella cheese
1 tbs avocado oil
INSTRUCTIONS
1. Preheat the oven to 350 degrees.
2. In an oven safe pan, add oil and sautĂŠ the garlic and onions until softened.
3. Add in the ground chorizo and cook through. About 6-7 minutes. You can drain any excess fat once cooked, if you want. I left it for the flavor!
4. Remove a couple spoonfuls of the cooked chorizo and set aside for topping.
5. Add in the cheese and spread evenly in the pan.
6. Put the pan in the oven and bake until the cheese is melted and starting to bubble. About 10 minutes.
7. Remove from oven and top with the remaining chorizo and cilantro.
